Does anyone know how I can create an XML output with WMS using
getfeatureinfo?
In my search the only solutions I found for WFS. Are there any options to
use mime-type XML for WMS?

Hi,
GeoServer WMS supports at least two XML formats; KML (aka Google Earth) and SVG. If you need something other than these we will need more information about what you are trying to accomplish.

You can ask the GetFeatureInfo output to be generated in GML2

Hi Flo,
Yes, we support GML output for GetFeatureInfo operations. Just use "application/vnd.ogc.gml" as the value of the info_format parameter. Here is an example:
http://localhost:8080/geoserver/wms?bbox=-130,24,-66,50&styles=population&format=jpeg&info_format=application/vnd.ogc.gml&request=GetFeatureInfo&layers=topp:states&query_layers=topp:states&width=550&height=250&x=170&y=160
