it looks like r3.in ascii is broken in GRASS6.4.3
I replaced the file on the web site with an unzipped file

which imports OK in GRASS7

I want to see if your volumes give me the same crash as mine. I could display my volumes last fall. So it is either 1) something that has changed in the wxNVIZ code since then or 2) something with OS X 10.8.

yes - if you do not have a surface, the vertical scaling cannot be done and that may be crashing wxnviz.
you can switch the surface off after you have everything loaded.
This also crashes the old nviz if you try to visualize 3D vector only (e.g. 3d points or TIN).I am sure this can be resolved by using the vertical extent (top-bottom) for scaling but it probably requires some work.
