Is it a limitation of SQLite or OOo DB that I cannot "drop columns" from
within OOo?
I connect witouth any problem to my sqlite.db, can retrieve the database
and even change values.
Why can I not completely erase some columns?

SQLite doesn't support drop column, by design. Here is how GRASS goes around the problem:
