How can I get a temperature map from Landsat Image within GRASS?
Which information I need to do thay?
Which other climate variable can I derive from Landsat images?

The needed conversion factors which you usually get from the metadata.
Alternative: use i.landsat.toar, see:

Which other climate variable can I derive from Landsat images?

Climate variables... not so many. Moreover vegetation indices and such.
