[GRASS5] Updated vector layer text

I've grabbed the vector data processing page as suggested by Helena and
have made a few additions to try to provide some clarity on the issue
of topology and layers. Hopefully this will be a little clearer for
naive users than it was before.

I've attached the file to this e-mail and look forward to hearing your comments.
