Is there a function that will do the reverse of r.in.ascii? That is,
convert a raster map layer into an ascii raster text file. Any

Yes, there is a program called r.out.ascii which will output a raster
file into an ascii text file. There are a number of programs that
will export a raster file into various formats like ppm, tga, and
mpeg.
