There are bugs in GeoTools support for Dates/Times, see:

and it makes me think the bug you filed is caused by the above ones.
I don't know if those were fixed in recent GeoTools versions,
but I suspect they weren't...

I have a column of type date in postgis. In geoserver, this
shows up as dateTime by default; that's fine, but when I
change it to 'date' (which is an available option) the
feature type description doesn't seem to be affected at all!this is what i get for that attribute regardless of whether
i've picked 'date' or 'dateTime'.
<xs:element name="creationdate" minOccurs="0" nillable="true"
type="xs:dateTime"/>This basically makes it impossible to upload to (using
geotools) if the date field is set to anything.--
