Hi Andreas,
I was trying to use the h2.db so the default one. The problem was in the jdbc.properties configuration file. It was pointing to a folder not writable by tomcat user.
In the meanwhile, I solved the problem related to the elastic search and I was also able to use the latest version of geonetwork.
Now I can move on trying to solve the problem with the DOI

It looks like you are trying to run GeoNetwork 4. Could it be? In that case you will need an Elasticsearch instance to act as index. Take a look at the v4 docks [1].
