Reprojecting to EPSG:3031 sometimes breaks

I have experienced an issue projecting graticules into EPSG:3031 antarctic polar stereographic.
Projecting to EPSG:3031 works ok if zoomed in close to the antarctic continent however if the bbox is a bit larger to include Tasmania or Argentina than the projection doesn't happen very well (see attachments).
The data is stored in PostGIS as EPSG:4326 however the same happens if it is stored as a shapefile.
Workaround is to project and store the data as EPSG:3031 with an external tool and add as a native EPSG:3031 layer to Geoserver.
