Use directory datastore in 'release' configuration

Now that we've got the directory data store working, we should be able to leverage to make configuration even easier.
We already have a 'shapefiles' directory in the default release data directory. So instead of defining it as a single shapefile datastore, we should define that directory as a data directory of shapefiles. This simplifies our installation instructions, since we can tell people to simply copy their shapefiles to that directory, hit load (hopefully that works, if not I guess have them copy in before they start GeoServer) and then edit the featureType.
