I have made the tasks from the Quick Start in the developer guide, but if I put the sources into eclipse, it shows me build path problems like the following one:
Project 'app-schema-test' is missing required library: 'C:\Dokumente und Einstellungen\maxbuttlies\.m2\repository\org\apache\xml\xml-commons-resolver\1.2\xml-commons-resolver-1.2.jar'
Have I forget anything?
The variable M2_Repo is set, the commands "mvn clean install " and "mvn eclipse:eclipse" are ended with success.

I wonder, did you have the app-schema profile activated when you ran both commands.
If you did I would try to execute a clean install from the extension/app-schema directory and see if it fails to download any of the artifacts. If all else fails you can grab the jar manually from any online maven repository and place it manually in your own local maven repository.

I would expect Maven to notice that this dependency was not present and download it from the osgeo repository (where it lives).
Maximilian, please try again (as described by Justin, "mvn clean install" in the app-schema-test directory). If a remote maven repository has a transient outage, maven may skip it and break your build; trying again will help diagnose this problem.
Note that you should only run "mvn eclipse:clean eclipse:eclipse" at the top level (src folder), but you can run "mvn install" for a single module.
Note also that if you use -PallExtensions you should use it for all maven steps.

I found something that can be the problem: the eclipse projects searchs geotools version 2.6, but maven downloaded the 2.7 version. Exits a solution for it, or must I change it manually?

Which branch are you building against? 2.0.x or trunk? 2.0.x depends on geotools 2.6 and trunk on 2.7.
I would try svn updating from the root of your checkout, clean install again, and then eclipse:eclipse again, with the “app-schema” profile activates for both maven commands.
