Hi,
NetCDF support is a GeoServer extension that needs to be installed as an add-on to the base GeoServer installation:

If you are compiling GeoServer you need to use the netcdf profile which includes the NetCDF extension:
mvn clean install -T4 -Pnetcdf
I see that you are using GeoServer 2.8 note that the current stable version is GeoServer 2.9, you can download
NetCDF extension for GeoServer 2.8.x from here: http://geoserver.org/release/2.8.x/
