There's been two problems found with RC3:
1. slow WMS rendering on very large datasets
Replace your geoserver.jar with this one:

2. unable to add new postgis featuretypes
Replace your gt2-postgis.jar with this one:
http://docs.codehaus.org/download/attachments/33699/gt2-postgis.jar
Both these jar are available from this page:
http://docs.codehaus.org/pages/viewpageattachments.action?pageId=33699
You should find these jars in "geserver/geoserver/WEB-INF/lib", inside
the .WAR in the same location, or in "lib/".
