I have many tables with the same structure (obviously with different data). I want to make a style that classifies the records of a column into quintiles and applies a specified color to each quintile. In this way I could use the same style for all the tables. Is it possible to generate a sld that calculates the ranges of each quintile, or should I generate it in a separate column?

Hi Pablo,
GeoServer has an extension called SLDService (https://docs.geoserver.org/latest/en/user/extensions/sldservice/index.html) that you can use for this kind of things.
I suggest you to have a look at that.

Just a reminder, SLDservice is an extension only on the 2.15.x series (we are going to have the first release candidate of it in a couple of weeks),
on 2.14.x and 2.13.x the functionality provided is less than described in that page and the module is provided as a community
module, so not part of releases but only found in nightly builds. A couple of links for you:
