There are two places that raster resolution is set for exporting, the first is under:
File > Page Set up > Map Setup > Output Image Quality
The second is under:
[Grid] Properties > Display > Display Quality
Both affect the output image resolution (balancing file size with image quality). Try setting them both to high settings and see if that helps.

i guess i could resample the grid again to minimize the blockiness.

I find that this (properties > display) setting is only really noticeable when pyramid layers are being used on large grids. If your grid resolution is comparable to the screen resolution you won't see much effect.
Keep in mind that this resampling is only for the display, it has no effect on the underlying raster.
If you want a smoother hillshade, you will need to start with a smoother grid. (see the RESAMPLE command)

i have continuous raster data that i used to create a hillshade. when i attempt to resample the data using bilinear interp (under properties > display), it looks exactly the same as when it is sampled as nearest neighbor. i have tried cubic convolution with the same results.this is a new "feature" on my version of arcgis, so i'd like to know if i accidentally switched some default setting i shouldn't have touched.
pc, windows xp, arcgis 8.3 (i think).
