I wonder if that company is still in business? Why does OSGeo Live link to reactions uDig project (it has not been alive for a decade or more).
Maybe then you can have a look to the following files and update what needs to be updated:
The Overview , the Quickstart and the configuration line
For the moment I am hiding the documentation on PR #881
I am imagining that your “just remove” also means to not include uDig on the Disk.
I am opening #2491 if you can give us a comment there I would appriciate

It seems the website is back http://udig.refractions.net today.
I have not been involved with the project for a decade, perhaps an active community member before removing.
