Further more, our DNS registry had a simple way for creating email aliases.
Does pairNIC support this as well? Or could we use an OSGeo mail server for
some deegree.org adresses?

For deegree.org we had the following email aliases - and we'd like to have
them again:
I've configured all of them, apparently they require approval and the
recipients have been sent an EMail for confirmation.
